INGREDIENTS
For the steak & shrimp:
4 Filet Mignons
12 Jumbo Prawns
1 tablespoon Chopped Garlic
1 tablespoon Chopped Cilantro
4 shots Jose Cuervo Tequila
4 tablespoon Annatto Seeds
1 cup Olive Oil
Kosher Salt
Fresh Ground Black Pepper
2 tablespoon French Butter
1 Lime
For the vegetables:
4 Zucchini
4 Yellow Squash
8 Portobello Mushrooms
4 Roma Tomatoes
2 oz. Annatto Seed Oil
Kosher Salt
Fresh Ground Black Pepper

Grill off the vegetables over a hot char-grill. Cool, and cut out
even-shaped circles from the vegetable slices. Stack the vegetable
circles, and skewer them with a rosemary stick. Grill off the shrimp,
steaks, until you achieve the desired doneness. Arrange the vegetables,
the steaks and shrimp on a plate for service, and serve with salted
shot glasses of Tequila and a wedge of lime
