INGREDIENTS 1 fresh salmon
1/2 lb mixed greens
2 cups heavy cream
1/2 lb butter
1 sheet puff pastry
2 yellow pepper
2 red pepper
2 onions
Salt and pepper, cayenne pepper, nutmeg
PREPARATION Cut the puff pastry in eight rectangular pieces (2"x3"),
and bake until golden brown and flaky. Cut the salmon in two pieces
horizontally. Salt and pepper; then sear. Sauté the onions
for three minutes in two separate pans, adding the red peppers to
one and the yellow peppers to the other. Then add the equal amounts
of cream, cayenne pepper, salt & pepper and nutmeg to both pans.
Reduce the heat, and cook slowly until the peppers are cooked thoroughly.
Blend both mixtures gradually adding butter. Place a small bed of
greens on the plate then stack salmon, pastry, salmon and pastry.
Next add both coulis around the plate.
