For the Tomatoes:
1 ea. Small Round Red & Yellow Tomatoes, sliced inch thick
Sea Salt to taste
Fresh Ground Black Pepper to taste
For the Mozzarella:
4 ea. Imported fresh Mozzarella, Beggar’s Purse (Burrata)
(if not available any fresh mozzarella can be substituted)
8 ea. Basil Leaves
Fresh Cracked Black Pepper to taste
Sea Salt
For Garnish:
Micro Purple Basil
Balsamic Reduction
Basil Oil or Basil Coulis |
Season the tomato slices with sea salt and ground black pepper.
Stack the tomato slices alternating red and yellow according to
size, to reassemble the tomato. Plate the tomato stack onto the
plate and then place the mozzarella on top. Season the mozzarella
with sea salt and fresh cracked pepper. Place two leaves of the
basil into the top of the mozzarella. Scatter the micro purple basil
on the plate and drizzle with basil oil. To finish the plate drizzle
the balsamic reduction over the top of the mozzarella.
