Thomas Parlo
Director of Culinary Operations
Chef Tom Parlo is presently the Director of Culinary Operations at the Biltmore Hotel, Coral Gables. Chef Parlo oversees the culinary side of all of Biltmore’s restaurants and banquets.
Most recently, Chef Tom Parlo was the Executive Chef of the luxurious Mandarin Oriental, Miami where he was responsible for overseeing the daily operations of the hotel’s four dining outlets in addition to all the catering and banquet functions. Mastering his extensive culinary skills in such renowned local establishments as the Sonesta Beach Resort, Key Biscayne, the Grove Isle Hotel Yacht and Tennis Club in Coconut Grove, Chef Parlo exhibits a natural ease and confidence in the preparation and presentation of his cuisine.
His training and extensive experience has crisscrossed the globe, with stints in Europe and cities throughout the United States. Chef Parlo’s career has taken him to some of the country’s top hotels, where he has worked with master chefs to develop his culinary splendor. Among these have been the Four Seasons and the St. Regis in New York City, both a Forbes, Mobile 5 Star hotels. At the St. Regis’s Lespinasse, voted 4 stars by the New York Times, Chef Parlo worked under the direction of Chef Gray Kunz. He worked several years at the Dining Room at the Ritz-Carlton Hotel in Buckhead, Georgia under Michelin Rated Chef Gunter Seeger. During Chef Parlo’s tenure in the Dining Room, the restaurant received the coveted Mobile 5 Star rating.
The James Beard Foundation named him one of the best “Hotel Chefs” in America.
Chef Tom grew up in St. Petersburg, on the West Coast of Florida. For the past 17 years, his career has brought him back to South Florida, where he has lived with his wife Michelle and their two sons, Joey and Ben. |
